Broccoli tends to be a vegetable that I find most kids either love or really don’t want to try. My kid used to not be a big fan of broccoli and it took many many many times putting it on her plate before she came around.

You guys, when I took the photos for this post the kid was literally hovering behind me. ” Mom are you done? Mom can I eat that quesadilla.”

I think I blinked and the whole family was looking at me with a look that says “can we have this dish tomorrow too.” My husband slyly asked if I would be making a video for this recipe, knowing that it meant he could grab up the leftovers.

If you’re looking for something fun and green to serve your kid for St Patrick’s Day, this recipe also works well for that too! Use spinach tortillas for a fully green breakfast and you can even serve them with my greenspinach pancakes.

How To Make A Breakfast Quesadilla

To cook a breakfast quesadilla you start by cooking the filling first. In a small pan, you’ll soften the vegetables, then add the egg and cook.

Remove the egg and broccoli mixture from the pan, wipe out the pan. Add the tortilla back to the pan and fill it with cheese and the egg and vegetable mixture. The gooey combination is delicious!

Can you Refrigerate Quesadillas?

Breakfast quesadillas can be enjoyed hot or cold. Make these quesadillas ahead of time and store in the refrigerator for two to three days.

How Do You Freeze Quesadillas?

This breakfast quesadilla recipe can easily be frozen ahead of time and reheated through the week. Make your quesadillas and lay them on a flat cookie sheet covered in parchment or wax paper in a single layer.

Freeze quesadillas for about an hour. Then wrap each quesadilla in freezer paper or aluminum foil to store in a container.

When reheating, unwrap a quesadilla and place in the microwave for 30-45 seconds. You can also reheat in the toaster oven in about 3-4 minutes. (and it is a million times better than a Taco Bell breakfast!)

Are Quesadillas Healthy To Eat?

Quesadillas in restaurants are loaded with oil and cheese and often oversized portions. (Even from the kid’s menu!) At home, you can make quesadillas with whole-grain tortillas and with much less cheese and oil for a much healthier, more balanced meal.

I also have found for breakfast for my child, I can make this recipe with only one tortilla folded in half and that is usually a big enough portion with fruit. For dinner, my child will usually eat two tortillas together (half of this recipe).

What Do I Serve This Breakfast Quesadilla With?

Serve this breakfast quesadilla with avocado or guacamole, tomato salsa, black bean and corn salsa or any salsa your family likes! (It’s great with pineapple salsa, yum!)

I will often also serve this breakfast quesadilla with fresh fruit such as berries, melon, apple or pear.

You can also add more protein on the side like sausage, bacon, or try this Air fryer Kielbasa for another quick idea.

Does This Recipe Work For Picky Eaters?

If someone in your family is an especially picky eater, I would consider chopping the broccoli a little finer as that will help to make sure it is easier to eat within the quesadilla.

We like our broccoli to still have a little give to it, roasted is our favorite way to eat broccoli. For super-picky kids and small toddlers, sometimes extra soft broccoli makes it easier to eat.

Is This Breakfast Quesadilla “Hidden Vegetables” My Kid Will Eat?

While I don’t think this breakfast broccoli cheese quesadilla recipe is especially sneaky, it is a great way to add a serving of vegetable to a meal. I think it’s important kids know vegetables are on the plate.

These quesadillas will stand up on their own as a weekend breakfast if you make a few extra they will reheat well. We have also been known to make these breakfast quesadillas for dinner, as eggs cook up quickly for a really fast and quick meal!

These fast breakfast quesadillas with broccoli and cheese are the perfect vegetarian recipe to make ahead or freeze for the week. Eat this delicious breakfast quesadilla for breakfast, lunch or dinner for kids and adults too!

Ingredients

  • 1 large large egg
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin
  • pinch salt
  • 1 tablespoon oil
  • 1/2 cup chopped broccoli Dice up this broccoli a little finer for a better end texture.
  • 1/4 cup water
  • 4 taco size tortillas
  • 3/4 cup shredded cheddar cheese

Instructions

  • Crack eggs in a bowl and scramble

  • Mix all spices in a small bowl, set aside.

  • Heat oil in a frying pan on high

  • Add broccoli to the pan and let cook for 3 minutes while moving broccoli in the pan. Add all spices to broccoli.

  • Add water to the broccoli. Cook broccoli on high an additional 1-3 minutes or until softened and water is mostly gone.

  • Turn burner to medium heat. Add scrambled eggs to the pan. Allow eggs to cook most of the way through before moving them into the pan to finish cooking then remove everything from pan. If there is egg stuck to the pan, remove before continuing.

  • Add a tortilla to the hot pan. Then add a layer of shredded cheese, followed by a layer of half of the cooked egg mixture. Add a second sprinkling of cheese, then a second tortillato the top.

  • Cook quesadilla for 2-3 minutes on each side until the cheese has melted and the tortilla is lightly browned.

  • Repeat for the second quesadilla!

Notes

Chop the broccoli up well in this recipe for kids who have trouble chewing broccoli. Softening the broccoli by cooking an extra minute or two can also help. Frozen broccoli can easily be substituted in this recipe.
