I have always felt that cornbread is the perfect complement to any meal. When made well, it is soft and sumptuous with a comforting earthy-sweet aroma and taste.

It’s just the sort of bread to serve with chili and soup, or to pile high in a breadbasket on a holiday table. No matter where you grew up, one bite of good cornbread seems to transport you right back home!

Although large pans of cornbread cut into squares are enticing, I prefer cornbread muffins. That way, each piece offers crusty edges and a fluffy center.

I also find cornbread muffins seem to seal in the moisture, so they don’t dry out as fast, making them marvelous leftovers for breakfast and snacks.

Not that you’ll have any leftovers of today’s recipe…

These lovely Apple Spice Cornbread Muffins are a play off my mom’s classic cornbread recipe with tender chunks of apple speckled throughout the muffins, and a hint of apple spice.

They are all a cornbread muffin could ever hope to be!

Unlike the dry, granular, lifeless cornbread you often come across, these little guys are golden, fluffy, slightly sweet, and bursting with fall flavors.

The fresh diced apple in the batter offers contrast in texture. It alsomakes the muffins extra moist. The apple spice flavor comes from the addition of rich creamy Musselman’s Apple Butter.

Adding apple butter, instead of just adding spices to the muffins, also elevates the fine tender texture of these beauties.

Musselman’s Apple Butter is a great choice for this recipe because it’s silky and smooth with a deep luxurious flavor. Plus, now it’s made without high fructose corn syrup!

I liked this recipe. Cornbread tends to be drier so we will see how they are tomorrow but they are just slightly sweet and the apple cubes add good moisture and texture to it. I think a little sprinkling of raw sugar on top before baking could also give a nice crispy top crust to it for more texture.

I totally love this idea. We always put blueberries in our corn muffins but I can see the apple being amazing too. Cannot wait to try.

    Somer,

Oh, how I miss that color – the muted yellow of cornbread baked just so….

These look perfect for Thanksgiving. And as luck would have it I’m headed back to Georgia (the land of cornmeal) for the holiday. Nice use of fall apples too.

    Thanks for sharing.

FAQs

Why do my cornbread muffins fall apart? ›

Avoid over-mixing the batter.

Cornbread batter should still be lumpy when you put it in the oven. If you are mixing it until it's smooth like cake batter, that could be the cause of your crumbly cornbread! Stop blending as soon as all the ingredients are mixed together.

How do you keep cornbread muffins from sticking? ›

You have two options to keep cornbread muffins from sticking to the pan: Line the wells of the muffin tin with paper liners, or grease the wells with cooking spray or butter. I much prefer greasing, as direct contact with the pan leaves the muffins with golden-brown sides that taste really good too.

What ingredient prevents muffins from falling apart? ›

Pudding will help the muffin keep its structure and give the texture a chewy crumb with a nice little bounce that won't crumble apart.

Will an extra egg make cornbread less crumbly? ›

Eggs, or egg substitutes help add structure to the cornbread. Without an egg or substitute, the cornbread may crumble and fall apart easily.

Why do you let muffin batter rest? ›

Quickbreads and muffins are hydrating batters, which means the flour absorbs the liquid over time, resulting in a very moist muffin, and improving the flavor. So let your muffin batter rest, up to 24 hours if possible.

How do you grease a muffin pan for cornbread? ›

How to Grease Muffin Tins
  1. Melt a small amount of butter in a saucepan over low heat.
  2. After the butter is melted, remove from heat.
  3. Dip a pastry brush into the butter and use it to lightly coat each muffin cup. Make sure you get the bottom, sides, and corners of the cup.

Why do my Jiffy corn muffins fall apart? ›

Why Is Jiffy Mix So Crumbly? The recipe on the box doesn't give the batter as much moisture as I like in my cornbread, which is why it can sometimes turn out crumbly. Adding in the sour cream and vegetable oil makes a huge difference and makes the best moist cornbread.

Why do my muffins rise and then fall? ›

Incorrect oven temperature (not pre-heated) prior to placing the muffin tray in. Too much batter in each muffin tin. The batter will rise, but crack, then fall/deflate. Generally you should leave about a quarter inch/6.35mm space empty per muffin.

What happens if you overmix muffin batter? ›

Realize that overmixing can cause muffins to be tough, bake unevenly, create elongated holes (or tunnels) and/or form peaked tops.

How do you fix dry crumbly muffins? ›

LiveStrong explains you can save your slightly overbaked treats by adding back in some moisture. All you have to do is brush the tops of your muffins with a bit of milk before they completely cool. If you really went too far, you can also try steaming your muffins when you're ready to eat them.
